Which knife steel suits you?
Quick answer
If you sharpen with a pull-through, you need steel at or below about 58 HRC, which means German X50CrMoV15 or Victorinox X55CrMo14. If you own a whetstone and will use it, VG-10 or VG-MAX at 60 to 61 HRC holds an edge far longer. Above about 63 HRC, steel like SG2 chips rather than rolls and is unforgiving of bone or frozen food.
Rockwell hardness figures are published by the manufacturers. The one to five scores for retention, toughness, corrosion resistance and sharpenability are relative rankings, not measurements.
The default German kitchen steel. It will not hold an edge like a Japanese powder steel and it is very hard to chip, very quick to hone back, and almost impossible to rust.
A honing rod straightens a rolled edge, it does not create a new one. Whatever steel you choose, it will eventually need a stone or a professional sharpening service.
This is a genuine metallurgical trade, not marketing. A harder edge is thinner and more brittle at the apex, so it survives longer in clean cutting and fails catastrophically rather than gradually when it meets something hard.

Is a harder knife simply a better knife?
No, it is a different trade. Higher hardness supports a thinner, more acute edge that stays sharp longer in clean cutting. The same properties make it brittle: it chips when it meets bone, a frozen edge or a twisting cut, and a chip needs far more work to remove than a roll does. The right hardness depends on what you cut and how you maintain it, not on which number is bigger.
What does HRC actually measure?
HRC is the Rockwell C hardness scale, measured by pressing a diamond cone into the steel under a set load and reading the depth of the indentation. Kitchen knives run roughly 55 to 66 HRC. It measures resistance to deformation, which correlates strongly with how long an edge stays aligned, and it says nothing directly about toughness or corrosion resistance.
Why can a pull-through sharpener not handle hard steel?
A pull-through drags the blade between fixed carbide or ceramic wheels at a preset angle. It removes metal by tearing rather than abrading cleanly, and it cannot match the angle a Japanese knife was ground to. On soft Western steel the result is a usable, crude edge. On hard steel above about 58 HRC it chips the apex and leaves the knife worse than before.
Is carbon steel worth the maintenance?
For someone who enjoys the upkeep, yes: carbon steels such as Shirogami take a keener edge than any stainless and sharpen with noticeably less effort. For everyone else, no. They patina within days, rust visibly if left wet even once, and react with acidic food. Modern stainless steels such as Ginsan get close enough that the trade rarely makes sense for a first good knife.
Does the steel matter more than the geometry?
Usually less. How thin the blade is behind the edge, and the angle it is ground to, decide how a knife feels in the cut far more than the alloy does. A well-ground knife in ordinary German steel outperforms a thick, badly ground knife in premium powder steel. Steel determines how long that feeling lasts before you need to sharpen it.
