No single material is good at every job
This is the second most useful thing to understand, and it is why a matching set is rarely the right purchase. Clad stainless sears and builds fond for a pan sauce. Cast iron conducts badly at about 52 W/m-K and holds an enormous amount of heat, which is what makes a crust. Aluminium conducts at about 237, roughly fifteen times better than stainless at 16, which is why almost every good stainless pan hides aluminium inside it. Nonstick releases eggs and cannot be run hot. Enamel is inert, so a two hour tomato braise belongs there and nowhere else.

Standards and conventions
A standard is a published specification, a material property or a physical relationship: copper conducts at about 401 W/m-K, All-Clad publishes 600F oven and broiler safe for D3, induction couples only to ferromagnetic metal. A convention is a widely used kitchen rule of thumb: roughly 25 square inches of pan surface per portion seared, four quarts of pasta water per pound. Both are useful. Knowing which one you are relying on tells you what is safe to bend.

Common questions
What does this site cover?
Cookware and kitchen knives, meaning pots, pans, bakeware, cutting boards and the materials they are made from. It deliberately does not cover countertop appliances such as air fryers, blenders, multi cookers or espresso machines, which are a different category with different buying questions entirely.
Where do the numbers come from?
Published material properties, manufacturer specifications and physical relationships, all labelled as standards. Where a figure is a kitchen rule of thumb instead, such as how much pan surface one portion needs to brown, it is labelled a convention. Where no defensible figure exists, the page says so rather than inventing one.
Do the calculators work without JavaScript?
Every calculator ships with a worked answer already in the page, using its default values, along with an explanation of how it arrives at that answer. JavaScript updates the result when you change an input and re-orders the product cards, which are all present in the HTML either way.
What is the single most useful thing on this site?
